Tasty dish, easy to cook and perfect for the Paleo diet.
(Makes 2 portions)
160g tin @fish4ever_recipes pink salmon
1/2 cup mashed sweet potato
2 spring onions (green parts), chopped
1/2 tbsp freshly chopped parsley
1/2 tbsp dijon mustard
1 tsp lemon zest
1/2 tbsp lemon juice
2 tbsp green olives, drained
2 eggs, beaten
1/2 tsp Himalayan salt
1/2 tsp ground black pepper
- Preheat oven to 180°C.
- Place all ingredients into a large mixing bowl + mash together with a fork until combined.
- Using your hands, form patties, about 3 inches in diameter + place in a greased baking tray.
- Bake in centre of oven for approx. 15 min each side, or until firm + browned on the sides.
- Bon appetite! They taste great with hot chilli sauce or aioli.👌
